Krusteaz Pancakes Will You Be My Valentine?

Happy Valentine’s Day! I feel like this month’s focus around here has been coming up with anything and everything heart shaped. I have literally been in a cooking frenzy since Feb. 1st! It happens every year. From Feb 1-14th I cook and bake and bake and cook. Of course the family loves it, and so do I.

One of my favorite goto brands is Krusteaz. I love how no matter which box batter you choose the result is always the same- it works. We have tested out so many of the muffins, pancakes and cookies and they all are delicious.

I wanted to make something special for hubby this year on Valentine’s Day, something that says I am thinking about him. So I came up with this lovely little creation. His favorite cookie is a linzer tart. I really did not want to serve him cookies for breakfast so I came up with a linzer tart pancake. Bonus- I used the protein pancakes to get in that extra protein for the day!

The linzer tart pancakes are super easy to make and look and taste absolutely divine! Just whip up two pancakes. Then use a cookie cutter to cut out a heart shape in one of them. Make sure you save that heart so you can put it on the dish later. Grab your favorite jam and spread it over the full pancake. I am planning to do this again with Nutella! Then put the pancake with the cut out on top of the full one.

There you go! Grab some powder sugar and sprinkle it over the entire pancake creation! Place the heart you cut out and place it next to it or on top. We celebrated National Pizza Day with home made pizza! ( The First One Fell On The Floor Cheese Side DOWN!!) So before I start yapping let me just say that if you are making home made pizza be careful. It was quite disappointing to prepare the crust, bake the crust, put on all the toppings, wait for it to bake and then FLOP, DROP, FLOOR!! Ugg…What a waste of precious time! Well, we didn’t give up and went on to whip up enough for everyone, but it was a bad start for sure and I was ready to just trash the entire idea after seeing that beautiful pizza face down on the kitchen floor. I should have taken a picture but I was too busy saying this, ” $#%#%!!!! #$$&^%^!!!!? #%$#%!”. Next time, I will definitely get the photo. I wish I had it now, since it was only the beginning of the story and not how amazing the entire pizza making session went last night. It definitely had a much better ending!

From the minute I heard that yesterday was National Pizza Day (which I only ever heard of yesterday morning) I knew we HAD to have pizza! Since we just ordered Pizza Hut the other night I was not ready to shell out more bucks for pizza and have everyone in the family say….We just had this the other night! Then I remembered that I had “Just add water” pizza dough in the cabinet! I had previously bought it thinking I was going to go all baker and create some pizzas but that never happened as soon as real life showed up! So this was a perfect time to bring out those little dollar bags of pizza crust and make National Pizza Day a reality!

As you already know the first pizza dropped! But, before that happened it was all pretty much euphoric! We started by creating the dough which was super easy. You just needed to ADD water! Half a cup of water to each bag and mix. SO easy, just so easy. We mixed and kneaded and then put it in the fridge for a little bit to chill. Next came out the rolling pin. Emily rolled and shaped and YES she did toss it up in the air until the perfect pizza shape was achieved. We covered our little pizza pan (the botton of the cheesecake baking tin I have) and let it bake about five minutes. That was my idea because I hate when the pizza arrives mushy on the bottom!

We took out the lightly baked dough out and began the toppings! Since this was a last minute thing we went with whatever was available in the house. It turned out we came up quite a delicious pizza treat! Sauce, mozzarella cheese, garlic, pineapples, tomatoes and green peppers! That was quite a keeper.

After the pizza was all topped up we put it back into the toaster oven (yes, it’s my go to because it’s right there on the counter top)! Ten minutes later we had PIZZA!! Thirty seconds after that we had Pizza on the floor!! Then in a little bit- pizza again…and more pizza and more pizza, until the pizza crust ran out!

I have to say that if you have never thought to make your own pizza at home, it’s definitely worth it. It’s EASY, great fun for kids, even the big kids! Have you ever made your own pizza? I’d LOVE to see it!

Our Home Made Valentine’s Day Brownies! Sorry, They Are All Gone!

Okay, so homemade does not mean from scratch, just so we are clear. We hardly ever start from scratch since I have figured out along the way it’s just a waste of valuable time on my side. There are some things I do make from scratch but that is because the box has not perfected them yet. As for brownies, the boxed ones are just perfect. They are the easiest baking gig ever and everyone loves brownies! I think these were Pillsbury brand. I usually buy whatever is on sale for a dollar!

Of course it’s fun to jazz up the brownies for different occasions, although they are great in any form. I found this beautiful heart shaped baking tin at Walmart for under five bucks. How can you go wrong?!! When you consider going into the bakery and spending three dollars each on ONE brownie or cookie it’s SO much cheaper to just bake them at home! Also, a question for you. Do you ever still sample the batter? I grew up as a kid WAITING for a taste. Now it seems we are so much more educated that the simple tasting a batter has me toying with my brain on if it’s worth the risk!!

These look SO good in the pan even before they were baked! I always feel like a great baker when I see them looking all great like this but then I have to cross my fingers and HOPE for the best once they hit the oven, or in this case, the toaster oven! 

brownies6brownies3Once they were baked we tested out some ways to decorate them. They tasted DELICIOUS!! For some we cut out the heart and replaced it with a chocolate peanut butter one and let it set in the fridge ( there were NONE of those left by the time the final pic was taken). We also tried to make a cut out heart stencil and stencil on a powder sugar heart in the middle. I guess they would come out good with more practice or the proper stencil!! The winner of decorating was powdering and brushing on the powder sugar. Everyone agreed it was their favorite. So, the good news- They were easy peasy to make and decorate and they came out perfect! The bad news- There are NONE left! I can’t blame anyone though, they were so good warm that I did not bother to save any. This was a total baking success and something that is easy and fun to do with kids in the kitchen! Happy Brownie Valentine’s Day!

peterheader Today is the day! Peter Rabbit has hit the big screen and believe me when I tell you that you will not not want to miss this one. I had my reservations about a Peter Rabbit movie. I mean, of course I absolutely adore that little mischievous bunny with the blue jacket. But a full blown movie? Could it actually hold up? It DiD!! Our entire family screened the movie together and each and every one of us loved it AND we ALL laughed! It was great for kids and great for adults as well.

The Peter Rabbit movie brings us to meet Peter Rabbit of the present but delicately throws back to the past and I must admit I may or may not have had a bit of a tear in my eye when they flashed back to the original story. I remember spending hours upon hours playing Peter Rabbit with my two sons and acting out the story! Especially for my oldest son, Peter Rabbit was big on his toddler list…and the song..I think I sang it a zillion times. Well, anyway, back to reality! Because I had such a strong connection to the original Peter Rabbit books and stories I was not sure if I could enjoy the new wave of Peter Rabbit, but it happened and I (a true Peter Rabbit fan) LOVED the new movie! I was beyond thrilled to have the chance to meet Peter Rabbit on the NYC mini Red Carpet Premiere thanks to Sony. Peter Rabbit was there and decked out in his blue jacket he has made famous!
