I have never honestly thought about cooking with yogurt. We always have yogurt in our fridge. It’s a family staple in this house, but cooking with it never crossed my mind once. I always viewed it as a cold food and never thought of anything else that could be done with it. I was thrilled to come across some wonderful cooking suggestions that put our beloved yogurt into even more parts of our day! Along with that, I also found out the awesome news that the American Dairy Association and Dairy Council is not on Facebook and Twitter! I found out some wonderful things about cooking with yogurt and a conversion chart with some substitutions you can use during cooking or baking. (source:Chobani website)



Conversion Chart: Cooking With Greek Yogurt

  • 1 cup butter = 1/4 cup Greek yogurt and 1/2 cup butter
  • 1 cup oil = 3/4 cup Greek yogurt
  • 1 cup sour cream=1 cup Greek yogurt
  • 1 cup mayonnaise = 1 cup Greet yogurt
  • 1 cup cream cheese= 1 cup Greek yogurt
  • 1 cup buttermilk= 1 cup Greek yogurt and 1/3 cup milk or buttermilk
  • 1 cup heavy cream= 1/2 cup Greek yogurt and 1/2 cup heavy cream
  • 1 cup creme fraiche= 1 cup Greek yogurt

Greek yogurt is made with milk and an active yogurt culture. Actually, it takes about four gallons of milk to make a gallon of Greek yogurt. Like all yogurt, it is a good source of calcium. Before its packaged, Greek yogurt is strained to remove some of the excess whey, resulting in a creamier, thicker, more satisfying yogurt.  Although brands vary, compared to regular non-fat yogurt, Greek yogurt typically has twice as much protein, less sugar, and less lactose.

This is the recipe for the muffins posted in the picture. They are delicious and NO one ever even suspected that they included Greek yogurt.



EASY-TO-MAKE, EASIER-TO-EAT MUFFINS
Love muffins? These easy-to-make muffins are delicate and moist and are great with coffee (for thegrownups) or with milk (for the kids). Recipe yields 12 muffins. Punch up the recipe by adding fresh fruit or honey!
INGREDIENTS
  • 1.5 cups flour
  • 1 teaspoon baking soda
  • 1 cup sugar
  • 0.5 cup softened butter
  • 3 eggs
  • 0.5 cup plain Greek yogurt
  • 3 TBS whole milk
  • 1 TBS vanilla extract
BAKING METHOD
1. Preheat your oven to 350 degrees.
2. Whisk butter and sugar together and add egg mixture.
3. Add Greek yogurt, milk and vanilla
4. Mix flour with baking soda and gradually add to liquid mixture, incorporating well.
I added blueberries because my children love fruit muffins! Of course you can add anything you would like to make the muffins perfect for your own family!
5. Bake for 20 minutes, or until golden brown.

7. Insert a toothpick into the center – if it comes out clean, it’s time to eat! ENJOY!. Fill muffin tin cups almost full.
