 Cirque du Soleil is thrilled to announce that its newest Big Top production VOLTA will play two engagements in the New York metro area beginning in the spring of 2018.  VOLTA will perform at Meadowlands Racing & Entertainment in East Rutherford, NJ beginning March 29, 2018 and adjacent to the NYCB Live at the Nassau Memorial Coliseum in Uniondale, NY on Long Island beginning May 17, 2018.  VOLTA is written and directed by Bastien Alexandre and with Jean Guibert as the director of creation. International electronic composer and musical director Anthony Gonzalez, brings his space-age future pop sound to the Cirque du Soleil stage for the first time ever. The name VOLTA refers to a sudden about-face, a change in emotion or idea often used in poetry. It also speaks to the jolt of energy delivered through the show.

Mom-ming For 27 Years And Counting! When A Baby Is Born, So Is A Mommy! Red Robin Celebration!

I wish I could tell you I have a picture around from twenty seven years ago when my oldest son was born. But as life would have it, I just want to get this post up. It was a last minute decision, but I just felt like sharing his birthday and the birth of me becoming a Mommy with you all! When I’m done posting I am going to look around and see if I have a baby pic to splice in! Wish me luck.

Sometimes it’s just a surreal feeling to think that I had my oldest son twenty seven years ago! I mean, I am in a circle of friends and bloggers right now where many of them are the same age, younger or older. But every year when my son celebrates his birthday there is something inside of me that just melts. It’s the same day I was born as a Mommy! It’s a title I hold the dearest of them them all. After having a miscarriage with my first pregnancy, I had the thought that maybe it would never happen, maybe I would never be a mom.

It’s certainly not the case twenty seven years and three kids later! I have been wearing my Mom title proud for all of those years. A lot of people have their kids, they grow up and it’s a done deal. But with having three kids all 8 years apart it’s been a different story around here. Every time one hit the big EIGHT another appeared, starting over! It’s been a constant parenting frenzy of all aged children in this house. But I can see it all leveling off now…27 years later, with only a teen and tween left to parent AND NO more on the way! lol

Today we celebrated at Red Robin. My oldest son has chosen Red Robin as his birthday celebration spot for at least the past six years, maybe more. It’s a good one and a great place to celebrate with our family and closest friends. The food is delicious, the birthday burger is free and the time is not rushed. It makes for a perfect celebration. We feasted on burgers and onion rings and endless fries and of course a rainbow cake! Even my Dad, who is 92, came out for the festivities! What a beautiful day!

Today we shared food, laughs and plenty of conversation. Today my son turned twenty seven years old and I turned 27 years of being a Mom! Here’s to all of your kids birthdays. Eggland’s Eggs Make the Best Muffins!EgglandsBestapplesEvery morning I wake up, get everyone ready for school and work and then start my day. After drop offs are done I head home to a day of blog work. Before starting for the day I love to begin my day with a good breakfast. Now, don’t get me wrong. I don’t bake muffins every day or break out the waffle iron, but sometimes you just want a nice warm breakfast.

This morning driving home through the ice, rain, snow and sleet all I could think about was making a muffin! I know it sounds crazy. I was going to run into the bakery. I even parked the car in front of it but when I went to get out there was SO much ice I scraped the entire idea. In the end it all worked out because everyone knows that homemade out of the oven muffins beat bakery or store bought any day of the week!

Luckily I have a ton of box mixes for everything you ever want to eat. I’m not a from scratch type of person, BUT I am a total “add to the box” person. I grabbed a box of Jiffy Mix, which by the way is under a dollar and found some apples, cinnamon and walnuts to add to the mix. I also always add extra eggs to the mix. I can’t see eating muffins and not lacing them with extra protein. Sometimes I even add in some protein mix to bump up the nutritional value. A few chops later and the mix came to life. The aroma in my house was incredible! In a way, I’m really glad about that ice or I would have missed out on a fantastic breakfast. In addition to the muffins I fried up an egg and added some Italian herbs to them and topped off the dish with some strawberries. Wow, what a delicious breakfast. I really spoiled myself this morning and I just had to share it with you!

From the moment I heard about Sony Pictures Animation’s The Star, I was intrigued. I wondered if Sony would be able to pull it off. I have to admit that I am generally not a fan of Christmas movies that tell the story of the birth of Jesus. They seem to never get it right. Honestly, I cannot say the same for The Star. They delicately and in a charming way used the star to guide all of us through the story of that magnificent night. With just one small and brave donkey named Bo we are lead though a journey.  Bo comes from the village mill but is in search of something better. I think that is definitely something we can all relate to in our lives.  When he figures out a way to break free his adventure begins and we are right along for the ride!

But he doesn’t take that journey alone, he teams up with Ruth, a sheep who has lost her flock and Dave, a dove who has a list of his own ambitions. Along the way we meet a slue of stable animals and three side splitting joke telling camels! As Bo continues surrounded by his friends or soon to be friends they become the  unlikely heroes in the greatest story ever told about the very first Christmas. The Star is one you will want to add to your bluray library for sure. It’s a family night movie for years to come with just the right amount of history and comedy to keep us watching it over and over again! Nutty Caramel Turtles

Nutty Caramel Turtles is the Candies category winner of the 2015 National Girl Scout Cookie recipe Contest Sponsored by Taste of Home®.

 

Prep: 10 min. Bake: 5 min. + standing

•3 milk chocolate candy bars (1.55 ounces each)

•12 caramels

•60 pecan halves

•12 Girl Scout Peanut Butter Patties® cookies

 

Preheat oven to 250°. Break each chocolate bar into fourths. Place each piece 2 in. apart on a parchment paper-lined baking sheet. Top with one caramel.

 

Bake 5-7 minutes or until caramel just starts to soften. Immediately press one pecan half on one side for head; press four pecan halves onto each corner for legs. Place one Peanut Butter Patties® cookie over the top of each candy, pressing down to secure. Let stand until set. Yield: 1 dozen.

 

Peanut Butter Trail Mix Fudge

Prep: 10 min. + chilling

 

1 pound white candy coating, chopped

1 cup creamy peanut butter

1 package (6-1/2 ounces) Girl Scout Peanut Butter Patties® cookies, coarsely chopped, divided

1 cup coarsely chopped salted peanuts, divided

1/2 cup chopped dried cherries, divided

Line a 9-in.-square pan with foil, letting ends extend up sides. In a large microwave-safe bowl, melt candy coating with peanut butter; stir until smooth.

 

Stir in 1 cup chopped Peanut Butter Patties® cookies, 1/2 cup peanuts and 1/4 cup cherries. Spread into prepared pan. Sprinkle with remaining chopped Peanut Butter Patties® cookies, peanuts and cherries. Refrigerate until firm.

 

Using foil, lift fudge out of pan. Remove foil; cut fudge into 1-in. squares. Store between layers of waxed paper in an airtight container. Yield: 2 pounds.

 

Girl Scout Peanut Butter Sandwiches

Peanut Butter Sandwich Banana Pudding

Prep: 30 min. + chilling

 

2-1/2 cups cold whole milk, divided

1 package (5.10 ounces) instant banana cream pudding mix

1 can (14 ounces) sweetened condensed milk

1 package (8 ounces) cream cheese, softened

1 carton (8 ounces) frozen whipped topping, thawed

4 to 5 medium bananas, sliced

1-1/2 packages (8 ounces each) Girl Scout Peanut Butter Sandwich cookies, divided

Whisk together 2 cups milk and pudding mix. In another bowl, beat sweetened condensed milk and cream cheese until smooth. Fold in whipped topping, then pudding.

 

Crush six Peanut Butter Sandwich cookies; set aside. Dip 24 Peanut Butter Sandwich cookies in remaining milk; place half in a 3-qt. bowl. Top with half the banana slices, then half the pudding mixture. Repeat layers. Cover and refrigerate at least 4 hours. Top pudding with reserved crushed Peanut Butter Sandwich cookies. Yield: 12 servings.

 

Peanut Caramel Thumbprint No Bake Cookies

Peanut Caramel Thumbprint No Bake Cookies is the Cookies/Brownies/Bars category winner of the 2016 National Girl Scout Cookie Recipe Contest Sponsored by Taste of Home®.

 

Prep: 30 min. + chilling

 

3/4 cup peanut butter chips

1 cup dry roasted peanuts

1 package (8 ounces) Girl Scout Peanut Butter Sandwich cookies

3 tablespoons butter, softened

1/4 cup creamy peanut butter

20 caramels

2 tablespoons half-and-half cream

1/3 cup milk chocolate chips

1 teaspoon shortening

Line 24 miniature muffin cups with paper liners.

 

Microwave peanut butter chips until melted. Pulse peanuts in a food processor until chopped. Reserve 3/4 cup. Peanut Butter Sandwich cookies in processor with remaining peanuts until fine crumbs form. Add softened butter, peanut butter and melted peanut butter chips; pulse until mixture is consistency of soft cookie dough. Meanwhile, microwave caramels and cream until smooth.

 

Roll tablespoonfuls of peanut butter mixture into balls; roll in reserved chopped peanuts to cover. Place balls in paper-lined muffin cups. Press a deep indentation in center of each with your thumb or the end of a wooden spoon handle. Cut a small hole in the tip of a pastry bag or in a corner of a food-safe plastic bag; transfer caramel mixture to bag. Pipe into indentations.

 

Microwave chocolate chips with shortening until smooth. Transfer chocolate mixture to a pastry bag or a food-safe plastic bag with the corner cut; drizzle over cookies. Refrigerate muffin cups at least 30 minutes before removing cookies. Serve at room temperature or chilled. Yield: 2 dozen.
